Eggless Fluffy Chocolate Chip Flapjacks

2 cups self raising flour

1 tsp baking Powder

3/4 sugar

100g melted butter

1 tsp vanilla essence

3/4 milk

1/2 cup chocolate chips

Add the above ingredients to a mixing bowl. Add your dry ingredients first then the wet. Gradually add the milk a little at a time until you get a drop like consistency. Add in the chocolate chips and fold into the mixture.

Heat a non-stick pan over medium heat and lightly coat with cooking spray. Ladle 1/4 cup and cook until bubbles appear. Flip and cook the other side, pressing the middle gently. Repeat with the remaining batter.

Enjoy with fresh cream, fresh fruit, a drizzle of maple syrup and a dust of icing sugar.
