Red Velvet Cupcakes

140g self raising flour (sifted)

115g sugar

1/2 tsp bicarbonate of soda

150ml oil

1/2 tsp vinegar

1/2 tsp salt

1/2 tsp good quality cocoa

115ml buttermilk

1/2 tsp vanilla extract

1 egg

1tsp red food colouring

Sift the flour, salt, sugar, cocoa and soda. Add the buttermilk, oil, vinegar, vanilla extract, eggs and food colouring paste in that order.

Mix until well incorporated. Line the cupcake trays with cupcake liners, full cups 3/4 way (45g). Bake for 15 minutes.

Cream cheese frosting

125g unsalted butter

115g cream cheese

½ tsp vanilla extract

250g icing sugar sifted

Mix the butter and cream cheese together. Add the icing sugar and vanilla extract and beat until creamy. Spread over the cooled cupcakes.
